Cheese Enchiladas Recipe

1 bunch of green onions, chopped finely
8 oz. chopped black olives
1 package flour tortillas
1 16 oz. container of sour cream
1 large can enchilada sauce
2-3 cups grated mozzarella cheese
chopped hot peppers
vegetable oil
Combine sour cream, olives, 3/4 mozzarella. Mix well. Heat up the oil in a skillet, and enchilada sauce in another.
Lightly fry a tortillas in oil, then dip in sauce. Spoon cheese mixture into center and rollup. Place in a long pan, add more sauce and top with left over mozzarella cheese and peppers. Bake at 350 degrees for 30 to 40 minutes. Serve with refried beans and rice.
