Zucchini Bread
This is a favorite recipe for Zucchini bread. I just love it and I know you will too. In fact you may have this recipe and have already passed it down to a friend or family member.
3 eggs
1 c. oil
2 c. sugar
2 c. zucchini, grated
1 Tbsp.vanilla
2 1/4 c. flour
1 Tbsp. cinnamon
2 tsp. baking powder
1/4 tsp. salt
1 tsp.salt
1 c. nuts, chopped
Preheat oven to 325*F. Grease and flour two 8×4 inch loaf pans. In a large bowl, beat eggs until light and frothy. Mix in oil and sugar. Stir in zucchini and vanilla. Combine flour, cinnamon , baking soda, baking powder, salt, and nuts; stir into the egg mixture. Divide batter into prepared pans. Bake 60 to 70 minutes, or until done.
